Chicken & Ancient Grain Power Bowl

4 each PERDUE® HARVESTLAND® Boneless Skinless Chicken Breast Filet, sliced
4 cup ancient grain medley, prepared
8 each petite rainbow carrots, halved lengthwise, roasted
8 each asparagus tips, roasted
2 each red bell peppers, sliced, roasted
2 Tbsp lemon zest twists
Tahini Vinaigrette Ingredients:
3/4 cup water
3/4 cup lemon juice
1/2 cup tahini paste
3 tsp garlic, minced
2 Tbsp mint, chopped
1 Tbsp olive oil
1 Tbsp salt
1 tsp sugar
1 tsp paprika
pinch black pepper
pinch ground cumin
1. Make the tahini vinaigrette: Whisk ingredients together and chill until ready to serve.

2. Combine ancient grains with 1 cup of tahini vinaigrette.

3. Place 1 cup of dressed grains into each serving bowl and top with roasted carrots, asparagus and red bell peppers.

4. Layer sliced chicken breast over roasted vegetables.

5. Top with lemon twist and drizzle with remaining tahini vinaigrette.
