     Preparation & Cooking
     
  • Thaw in original plastic casing in refrigerator for 48 hours. Do not thaw at room temperature or in cool water, and do not refreeze.
  • Remove plaster outer wrapper and separate breast lobes. Brush with oil or spray with vegetable spray to promote browning.
  • Cooking time will vary based on equipment used.
  • Conventional Oven: Cook in preheated 350'F oven to internal temperature of 160'F, or approximately 20 minutes per pound.
  • Convection Oven: Cook in preheated 325'F oven to internal temperature of 160'F, or approximately 15 minutes per pound.
  • Cooking from frozen state is not recommended, as breast lobes can not be separated.
  • Allow breast loaves to stand at least 5 minutes before slicing.

  •  Serving Suggestions
     
  • Season or marinade thawed meat as desired, then prepare according to preparation instructions.
  • Charbroil, smoke or steam, then slice for entrees, or chop/dice for salads, fajitas, barbecue and casseroles.
  • Center each breast lobe on a rotisserie split and secure with clamps. Rotate and roast at 350'F until done.
  • En croute: Precook individual lobes and cool somewhat before pastry is applied. Bake to brown pastry.
  • Pocket stuffing: Cut a pocket in thawed lobe. Cut to within 1/2 inch of all sides of meat. Fill pocket with stuffing and secure opening. Brush with oil and cook in regular or conventional oven until done.
  • Use slices for roulades, medallions or cutlets. Use smaller cuts for nuggets, kebobs, and stir fry.
  • Slice, bread, deep fry and serve with Italian tomato slices and cheese.
