Thawing: The printed Perdue Polybag on the turkey has safe handling and thawing instructions on it. It is recommended to cook the product from a thawed state. The approximate thawing time is four days under normal refrigeration conditions. Cooking instructions are included on the bag.
Set the oven temperature to 325'F. Place the turkey in a covered roasting pan or cover with aluminum foil. Cook until a thermometer (placed in the deepest portion of the breast) reads 165'F. Remove roasting cover or foil. Cook further until the temperature reaches 180-185'F. This additional time will brown the surface of the product. Total cooking time will be more than 4 hours in a convection oven.
Recommended cook time is 18-20 minutes per lb.
To reach proper temperature, it is strongly recommended to cook this product between 5 and 5 1/2 hours in a convection oven, or 5 1/2 to 6 hours in a conventional oven.
If cooking the product from a frozen state, add 30 to 45 minutes additional cooking time. Times will vary with equipment and altitude.
After the roast has been cooked, it is important to remove the netting while the roast is still hot. Start with net around or near the drumsticks and work toward the breast, pulling the net from the meat carefully, so as not to tear the skin.

Allow the turkey to sit for 30 minutes before slicing. Doing so will give a better yield and allow for more uniform slices. Remove the skewer and slice.
