Breading Terminology

  • Breading Pickup—Amount of Cover System applied to a product by percentage.
  • Lightly Breaded—Up to 14% Pickup.
  • Breaded—14% to 30% Pickup.
  • Fritter—30% to 64% Pickup.
  • Croquettes—64% and higher Pickup.
  • Homestyle—Process in which a fritter breaded product is flipped around to replicate a hand breaded appearance.
  • Par Fried, Prebrowned, Hot Oil Set, etc—Refers to the process in which a product is breaded and passed through a fryer to set the cover system.
  • Steam Leavened Breading—Following Cover System application the breading is "set" in a steam oven. This adds moisture and volume to the product yielding a light, crispy bite.
