USDA REGULATIONS Regarding Fully Cooked Re-Packaged Protein Products consists of three levels of compliance:

Level 1 (Highest Level of Compliance)

  • Combination of Antimicrobial Ingredients and Thermal Packaging Process
    Antimicrobial Ingredients:
      - Sodium Lactate
      - Sodium Diacetate
      - Potassium Lactate
      - Citric Acid
  • Perdue will be @ Level 1 by December 1, 2004 $6,000,000 capital investment

Level 2

  • Use of Anti Microbial Ingredients to retard potential harmful micro organism growth in product, in combination with good Manufacturing Processes.

Level 3

  • Good Manufacturing Processes in combination with “Hold and Test”
